Mid Coast Center for Community Health & Wellness Launches Healthy, Local Food Initiatives

The Mid Coast Center for Community Health & Wellness will be introducing two new programs this spring to help bring more diverse, healthy food options to our community.

First, on April 10, the Center for Community Health & Wellness will be launching a Local Celebrity Chefs lecture series. Based in the center’s teaching kitchen, the free, public series will involve chefs from local restaurants demonstrating how to make signature vegetarian dishes.

The first lecture will be taught by Tai Choo, owner of the Brunswick food truck Taco the Town, and held from 5:30 until 6:30 p.m. on April 10 at the Center for Community Health & Wellness.

Choo, originally from Sacramento, California, opened his food truck in Brunswick in the spring of 2016. As part of the Local Celebrity Chefs series, he will be making "El Camote," (a sweet potato taco), with Mexican-style rice and fresh pico de gallo salsa.

On April 22, Choo will also begin parking his truck at the Parkview Campus, as part of a new initiative. Taco the Town will be stationed at 329 Maine Street from 11 a.m. until 1:30 p.m. on Mondays during April, May and June instead of its usual location on the Town Mall, and serving a special vegetarian menu to patrons.

"We are very excited to host Taco the Town for the first time this year, and to provide our staff, patients and community members with healthy, varied lunch options," said Cate Parker, director of Community Health & Wellness. "Taco the Town is one of Brunswick's most popular food vendors, and hopefully introducing a vegetarian menu will show patrons that eating healthy doesn’t need to be boring."
